Lemon Muffins

I went to Gourdo's with Jantzen and Camille this evening and bought some pretty muffin cups! I've been wanting to buy these for quite a while but figured they were too expensive. Gourdo's was on sale but the cups were still sold full-priced. It was one of those 'what-the-heck' moments and I finally gave in to the temptation of buying them. I am on a chocolate break because we have a weigh-in at the office tomorrow. We're having a 'Biggest Loser' competition. :) Anyway, I wanted to make something zesty and what's more zesty than Lemon Muffins? I searched the internet and found a recipe that looked simple enough and had ingredients that were in my cupboard. I used Kate's Kitchen's Lemon Muffins with Crunchy Lemon Sugar recipe. It only took me an hour to finish everything and they look really good. I can still smell the lemon on my hands. :) Here are some pictures of the finished product! Badminton Tournament.. Team International wins!

Our company just held its first OGA Badminton Tournament and yesterday was our championships. It was down to four teams: Rod/Gian, Joanna/Pat, Mike/Joie and Peng/Me. We were third in our ranking for the semi-finals and boy, did we want to win! :D I was not able to practice last Saturday because I had to deliver the cars cake, so I was quite nervous. We arrived at Serendra around 7:30PM and practiced at the basketball court while waiting for the badminton courts to open. I was practicing my new service style because I was not that comfortable with it yet. Anyway, our first game was with Joanna/Pat. My first games are always better than my second so even though I missed some shots, I did manage to hit quite a bit back. Scoring was best of three to 21, sudden death and we won the first two. It was a close game. I think we only won by a point or two. Beating them assured us for the second place and since Mike/Joie beat Rod/Gian in their match, we had to face them for the championships. Zoooommmm... Zoooooommm!

It was my cousin, Rainier's birthday party last Saturday and my aunt ordered his cake from me; so I spent my whole Friday and the wee hours of Saturday finishing his cake. Without further a due, let me present my very first fondant masterpiece, Lightning McQueen! The only edible parts of the cake were the car and the last layer. I attached the checkerboard one by one as I had no idea how to do it. I also made 2 dozens Chocolate Cupcakes with Buttercream. I bought Cars stickers and attached them to straws as cupcake toppers. :) Overall, it took me around 18 hours to do everything but it was worth it because they loved the cake! To the next fondant creation! :)
