I went to Gourdo's with Jantzen and Camille this evening and bought some pretty muffin cups! I've been wanting to buy these for quite a while but figured they were too expensive. Gourdo's was on sale but the cups were still sold full-priced. It was one of those 'what-the-heck' moments and I finally gave in to the temptation of buying them.
I am on a chocolate break because we have a weigh-in at the office tomorrow. We're having a 'Biggest Loser' competition. :) Anyway, I wanted to make something zesty and what's more zesty than Lemon Muffins? I searched the internet and found a recipe that looked simple enough and had ingredients that were in my cupboard. I used Kate's Kitchen's Lemon Muffins with Crunchy Lemon Sugar recipe. It only took me an hour to finish everything and they look really good. I can still smell the lemon on my hands. :)

The colors are much nicer in person. I only used my phone camera so the quality isn't so nice.
I used a 1/4 measuring cup to scoop the batter into the cups. I wanted to have 8 so the muffins fell below the sides of the muffin cups. I think I'd stick with 6 muffins next time. :)
*Sigh* Wished I had a nicer camera..
I haven't tasted them yet because I want to bring them to the office but I'm sure they'll taste great! I'll post an update tomorrow. Ciao!
Update: Justin wanted to taste the muffins so I gave him one. I had a bite and it was wonderful! It was very moist and you can really taste the lemon zest. The only thing I'd do differently is that I'd put more sugar for the top because mine didn't form a crust. A definite must-try recipe!
