Roasted Chicken with Gravy and Chocolate Pudding

Ayn had been requesting for me to make Roasted Chicken for quite sometime. It's the one I made last December for my Christmas Party at home. Since it was a Saturday and I was also craving for chicken, I decided to try my luck with the oven we have here at home.

Here it is -


For the marinate, mix together some Salt, Pepper, Onion Power, Thyme and Rosemary. I only have dried herbs so these are what I used. Just estimate because I didn't really measure anything.


Mix in some oil, preferably Olive Oil.


Loosen the skin from the meat of the chicken and insert some butter cubes.


Pour the marinate all over the chicken. Leave it for an hour or more. In this case, I was in a hurry so I wasn't able to marinate it long. Put it in the oven at 250C for an hour or until the juice between the leg and breast runs clear.


While waiting for the chicken to finish baking, boil the head, feet and neck to make chicken stock.


When the chicken is done, put the excess juice in a saucepan. Boil until it reduces.


After reducing, add the chicken stock. Don't add everything at once or it will become too watery. Just add enough to make it into a gravy.


And there you have it! Baked Chicken with Gravy.
Taste verdict: It could use more time marinating as it was a bit bland. The gravy made up for it though.


After dinner, I taught Ate Kleng how to make my special Chocolate Pudding. This is what it looks like after baking.


The inside is 'molten' while the outer layers are 'cakey'.


It goes very well with a scoop of Vanilla Ice Cream. Yummy!

Eating at Home

Reg and I have been trying to lose weight to better control our sugar intake. We ate out a lot when I was still pregnant so he gained "pregnancy pounds" as well. Haha! I have been going to the supermarket to buy 3 weeks worth of dinners the past 2 months and I have been making weekly menu plans to help us achieve our goal. Giving Up

There are things in life that makes you want to give up. Don't get me wrong, I'm not currently depressed. 😅 I was out with my mom the other day and chanced upon a dance store. For some reason, I always try to look for a white tutu even when I don't plan to buy one. You see, when I was in Prep-1, I joined a dance program in school.
